Controlling iOS UITableView

I've some experiences with creating an OS X app handling multiple user input with an array controller. The NSArrayController takes care of showing and updating an NSTableViews content. Adding, editing and deleting is all controlled with the NSArrayController in the same view.

What would be the similar approach for iOS? It looks like everything is more split in different views. I don't see how to handle multiple user input, showing it in a UITableView which is editable and where rows can be deleted. Does somebody have an good place to look for tutorials?
